Easter Peeps

I hope everyone had a great Easter weekend! Mine was pretty busy, but I managed to find a little time for for spiritual reflection and focused on gratitude for our Savior and His life.

I also managed to find time for a little fun... I heard a couple of people at work talking about making a Peeps Cake for an Easter dessert. I had no idea what a "Peeps Cake" was or how to make one, but I was intrigued enough to try it out. This is what my mom and I came up with:

It ended up pretty tasty, too! It was my mom's chocolate cake with white frosting and coconut dyed green, for grass. Very festive.

Now, if only SPRING would stick around so we could see some REAL green grass...

Oh Mel it's just darling! It reminds me of my taditional birthday cake my mom used to make me every year. Coconut shavings dyes green and a bunch of jelly beans and robins eggs scattered about. You might find an occasional chocolate bunny there too. I was totally bumed I didn't get one this year so thanks for sharing!!
